High Protein Cookie Dough Fudge

Something amazing happened in my kitchen today… HIGH PROTEIN COOKIE DOUGH FUDGE! I have been craving some sweet treats lately so went into recipe finding mode that was healthy, wholesome & that I’d be happy to give to my family. I didn’t find anything I loved so I made up my own from a combination of what I found. I have been fascinated by using chickpeas in sweet treats. I love that they’re so high in protein and wholesome so came up with this fudge & it’s FREAKING AMAZING! Needless to say, we only have 1 piece left… (not for long!). The texture is so velvety smooth & fudge-like, and the taste is sweet & heavenly. As far as ingredients go they’re pretty basic & easy to get your hands on, and the recipe is a "throw it in the blender & voila” type. If you'd like to make it vegan omit the choc chips and/or use cacao nibs, chopped nuts, or dried fruit.

Recipe & Method
1 can chickpeas, drained & rinsed
2/3 cup + 2 tabs nut butter (think peanut butter, almond butter, cashew butter, etc).
1/2 cup brown rice malt syrup
1 tsp pure vanilla extract
1/3 cup melted coconut oil
pinch salt
1/4 cup dark chocolate chips (optional)
1. Combine all ingredients except for the choc chips in your processor.
2. Process until a smooth velvety texture is created. In my blender it only took 1-2 mins but have patience if you’re not working with a high power processor. The smoothness is the key!
3. Move to a mixing bowl & stir through choc chips.
4. Pour into lined loaf tin & smooth out. I added some choc chips on top at this point.
5. Set for an hour in the freezer then cut into squares.
6. Freeze for another hour before consuming.
** EDIT: I just made this and used peanut butter as the nut butter, and cacao nibs instead of chocolate chips and it was AMAZING!!! Definitely a must try alternative! *Pic below). **
