Coconut, pepita & choc chip granola

Granola is the perfect anytime treat. You can serve it for breakfast with fruit & your fave yoghurt, or pick at it as a snack when that mid morning hunger comes or the afternoon slump. I'm not going to lie, we also eat it for dessert too so feel free to indulge in it after dinner!

There's nourishing ingredients like wholegrain oats, and healthy fats to keep you fuller for longer like walnuts and pepitas. Combine these guys with sugar-free choc chips and you have yourself an easy, healthy and delicious recipe that you can make for the whole family.
RECIPE:
1 cup wholegrain oats
1 cup coarsely chopped walnuts
1 cup shredded coconut
1/2 cup coarsely chopped cashews
1/2 cup pepitas
1/4 cup sugar free choc chips (I used Healtheries sugar free chocolate chips)
1/2 cup coconut oil
1/4 rice malt syrup
METHOD:
Preheat oven to 100'c.
Stir all ingredients together in a bowl EXCEPT for the pepitas and choc chips.
Transfer to two trays and spread out evenly.
Bake 40 mins, giving the trays a good shake around halfway through.
Cool completely on trays.
Transfer to a bowl and add pepitas and chocolate chips.
Store on your bench in a beautiful big jar.
